How is a free app like this sustainable?

Can the company see my routine?
Not unless you create an account. Without one, routine data stays on your device and nothing is collected. If you choose the optional account, a copy of your routine is stored so it can sync, as the privacy policy explains. There are no analytics or advertising SDKs in the app either way.
What happens to my data if I delete the app?
Everything on your phone is deleted with the app, unless you saved a backup export first. If you have an account, its copy stays until you delete the account from Profile.
